Taisie Ferrell’s High-Fiber Vegan Lunch Bowls

Taisie Ferrell had been vegan for years, but it wasn’t until a frustrating period of sluggish afternoons and digestive discomfort that she started paying attention to fiber. “I thought I was eating healthy,” she recalls. “But turns out, not all plant-based meals are created equal.”

She began rethinking her midday routine—especially the way lunch left her feeling more tired than nourished. Her solution? Building high-fiber lunch bowls that gave her sustained energy without the bloat or blood sugar crashes.

But Taisie wasn’t looking for complex or fancy. “I needed something that worked on my busiest days,” she says. So she developed a handful of go-to bowls that she could throw together in minutes: a base of grains or greens, a hearty bean or lentil for protein, a few roasted or raw veggies, and something creamy or tangy to bring it together.

More than the ingredients, it was the fiber that changed everything. “It kept me full, kept my digestion smooth, and gave me the kind of energy that didn’t dip at 3 p.m.,” she explains.

Now, lunch is one of her favorite parts of the day. Not just because of the food, but because of how she feels afterward—steady, clear, and nourished. “Fiber isn’t flashy,” Taisie smiles, “but it works.”
