Coral Fox’s Vegan Meal Plan That Boosts Immunity

Coral Fox was no stranger to getting sick during winter. “I used to get hit with at least two colds a season,” she says. “Even when I ate ‘healthy,’ I felt like I was always on the edge of burnout.” But after shifting to a plant-based lifestyle with a focus on immune health, everything began to change.

She didn’t go vegan overnight. It started with curiosity—and a strong desire to stop relying on supplements and quick fixes every time she felt run down. “I thought, what if I used food as my first defense?” Coral remembers.

Dinner became a soothing bowl of miso soup with tofu, seaweed, and a side of roasted squash. “I didn’t aim for perfection,” she says. “Just plants that made me feel good.”

Within weeks, she felt more vibrant. Her sleep improved. Her energy was stable. And that winter? Not a single cold. “It was the first time in years I didn’t reach for the medicine cabinet,” Coral says.

Now, she encourages others to view vegan eating not just as a lifestyle, but as a tool for resilience. “Your immune system is fed by what you eat daily,” she says. “When you support it consistently, your body thanks you in ways you didn’t expect.”
