Mina Halley didn’t set out to become a nutrition advocate. But after a series of autoimmune flare-ups left her fatigued and foggy-brained, she began to dig into what might be triggering her symptoms. Her doctor recommended an anti-inflammatory diet, and what started as a necessity quickly became a passion.

“I’d heard the term before,” Mina says. “But I never really understood what it meant until I felt the difference in my own body.”

She began with simple swaps: replacing processed snacks with fresh fruit, white bread with whole grains, fried food with roasted vegetables. She started including more berries, leafy greens, turmeric, and omega-3 rich seeds like flax and chia. But what made the biggest difference wasn’t just the food—it was the awareness.

“I paid attention to how I felt after each meal,” Mina explains. “It was like tuning in to a language my body had been speaking for years.”
